Carthage Strawberry & Gel Cake

1 Duncan Hines Yellow Cake Mix
¾ C Oil
1 C Buttermilk
1/3 C Sugar
4 Eggs (XL or Jumbo)

Sift cake mix twice then mix all ingredients. Beat on high for 4 minutes. Pour batter into 3 greased & floured cake pans. Bake @ 350º for 15-20 minutes.

Strawberries & Gel Cake Icing

1 12 oz carton of Cool Whip [not low calore]
2 8 oz package of Cream Cheese [not low calorie]
1 Stick of Butter [softened]
1 C Sugar
2 t of Vanilla
1 quart Strawberries
1 pkg Strawberry Gel [not low-sugar]

Beat sugar, cream cheese, butter and vanilla together until smooth. Add cool whip and beat until combined. Cut up quart of strawberries and add one package of strawberry gel (mix together). Layer cake, icing, & strawberry mixture. Refrigerate. [Cannot freeze, because strawberries don’t freeze well] Put in freezer 30 minutes before eating so icing will be firm. Great at Easter!
