Broccoli Salads



I used to make broccoli salad with this first recipe, which is very good. But, when a friend shared the second recipe with me, it is the one I now prefer. It's pretty easy, not as many ingredients, and very tasty! I also have a broccoli slaw recipe and other broccoli salad recipes I'll post. Maybe you'll find your own favorite.

Original Broccoli Salad

Ingredients:
10 slices bacon
1 head fresh broccoli, cut into bite size pieces
1/4 cup red onion, chopped
1/2 cup raisins
3 tablespoons white wine vinegar
2 tablespoons white sugar
1 cup mayonnaise
1 cup sunflower seeds

Directions:
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. In a medium bowl, combine the broccoli, onion and raisins. In a small bowl, whisk together the vinegar, sugar and mayonnaise. Pour over broccoli mixture, and toss until well mixed. Refrigerate for at least two hours. Before serving, toss salad with crumbled bacon and sunflower seeds.


New Broccoli Salad

Ingredients:
5 slices bacon
1 head fresh broccoli, washed and cut into bite size pieces
1/2 C raisins
1/2 C cashews
3 T white wine vinegar
2 T white sugar
1 C mayonnaise

Directions:
Cook and crumble bacon. In a medium bowl, combine the bacon, broccoli, cashews,and raisins.
In a small bowl, whisk together the vinegar,sugar and mayonnaise. Pour over broccoli mixture,
and toss until well mixed. Refrigerate for at least two hours.


Tricia’s Broccoli Salad

Ingredients:
4 stalks broccoli
8 slices of bacon
½ C raisins
½ C pecans or cashews
4 green onions
1 C mayonnaise
2 T apple cider vinegar
6 T sugar

Directions:
Combine 1 cup mayonnaise, 2 Tablespoons apple cider vinegar, and 6 Tablespoons sugar. Mix well, and pour over salad ingredients. Mix. Chill and serve.


Variation on Broccoli Salad

Ingredients:
1 C mayonnaise
4-5 cups broccoli flowerettes
1/2 red onion, sliced
1/2 cup cheddar cheese, grated
1/2 lb. bacon, fried and chopped
2 T apple cider vinegar
6 T sugar

For dressing, combine mayonnaise, apple cider vinegar, sugar. Mix well, and set aside. Combine all the other ingredients and mix. Pour dressing over salad and mix well. Chill at least two hours and serve.

Broccoli Slaw

Ingredients:
1 pkg. broccoli slaw
1 pkg. sunflower seeds
1 pkg. slivered almonds
1 bunch green onions
2 pkg. beef flavored Chinese noodles
1/3 C red wine vinegar
1/2 C sugar
1/2 C oil

Directions:
In a large bowl combine slaw, seeds, almonds, chopped onions and crushed noodles. In a separate bowl combine 2 pkg. beef flavoring, vinegar, sugar, and oil. Pour over slaw mix and serve immediately.
