Thanksgiving Sweet Potato Soufflé

Ingredients:
6 C cooked and mashed sweet potatoes
3 eggs
½ stick margarine
½ t salt
¾-1 C sugar
½ C sweet milk
1 t vanilla
1 t orange flavoring

Topping:
1 C light brown sugar
½ C self-rising flour
½ stick margarine
1C chopped pecans


Directions:
Combine ingredients, except the topping, and pour into dish.
Mix and blend by hand the topping ingredients. Spread mixture over top of soufflé. Bake at 350 degrees until topping is light brown.
