Ingredients:
2 (8oz.) cream cheese
3/4 C sugar
2 eggs
1 t vanilla
1 T lemon juice
18 to 24 vanilla wafers
Topping of your choice
Directions:
Soften and beat cream cheee until fluffy. Gradually add sugar while mixing. Beat in eggs one at a time. Mix in vanilla and lemon juice. Line minature muffin tins with paper cups. Place a vanilla wafer in each. Fill 3/4 full. Bake 20 minutes at 350. Refrigerate until serving. Can be frozen. Makes 18-24.
