Hummingbird Cake

3 C of all-purpose flour (sifted)
2 C of sugar
1 t of salt
1 t of baking soda
3 eggs (beaten)
1 ½ C of vegetable oil
1 ½ t of vanilla
1 8oz. can of crushed pineapple (do not drain)
1 Cof chopped pecans
2 C of chopped bananas

Pre-heat oven to 350 degrees. Combine dry ingredients in a large mixing bowl. Add eggs and oil: stirring until dry ingredients are moistened. (Do NOT beat) Stir in vanilla, pineapple, pecans, and bananas. Spoon batter into 3 prepared 9” cake pans. Bake for 25-30 minutes. Cool in pans for 10 minutes and then turn out.
