Carthage Carrot Cake and Frosting


        
Ingredients:
1 Box Duncan Hines Yellow Cake Mix
4 Eggs, Large or XL
¼ C Oil
1/3 C Water
2 t Cinnamon
1 small box Instant vanilla pudding
4 C Grated carrots

Directions:
Use a sifter to sift the cake mix twice. Add next 5 ingredients and mix for 4 minutes on medium/high. Fold in carrots. Pour mixture into 3 greased and floured cake pans. Bake at 350º for 18-22 minutes.

Carrot Cake Icing 

Ingredients:  
1 8 oz package of Cream Cheese
½ Stick Butter, softened
1 t Vanilla
1 Box Powdered Sugar
1 Small package of Black Walnuts

Directions:
Cream together butter, vanilla, and cream cheese until smooth. Gradually add powdered sugar. Fold in black walnuts and spread on the cake layers
