Jennie's Sautéed Spinach

Makes 8 servings (Jennie says 4)
Prep time: 5 minutes
Cooking time: 5 minutes

1 T olive oil
¼ C julienned red onion
¼ t chopped garlic
½ pound spinach, stemmed and cleaned (about 4 cups)
1½ t balsamic vinegar
Salt and pepper to taste

In a large pan, heat olive oil. Add onion and garlic and cook 1 minute. Add spinach, stirring often, and cook for 2 to 4 minutes or until done. Add balsamic vinegar and salt and pepper.
