Cauliflower Gratin


Ingredients:

1 C heavy cream (I used 2% milk)
1 T all purpose flour
1 C grated Parmesan cheese, reserve 1/4 C for topping. (I mixed in some sharp cheddar too)
Salt
Pepper
1 t or more of cayenne pepper
1 head of cauliflower, cored and cut into florets
1/2 C breadcrumbs
1 T butter, cut into small pieces (I used 2T)

Directions:
Preheat oven to 400 degrees. On your stove top, over medium heat,
make a cheese sauce using the first 6 ingredients, (only 3/4C of the
Parmesan whisking as it combines. Butter a casserole dish, and place
the florets into it. Pour the cheese sauce over the florets and toss
them around in the sauce. Cover with foil and bake in the over for
30 minutes. Remove from the oven and remove the foil. Combine 1/4 C
Parmesan with the breadcrumbs, and sprinkle over the top of the casserole.
Dot the butter pieces on top and return the dish to the oven for another
10 to 15 minutes or until the cauliflower is tender when pierced with a
knife, and the top is browned. (I used the broiler for a couple minutes
to get a nice brown top.)
